Broccoli is in season! Move over lettuce, you are no longer the only greenery for sandwiches any more!

I am a broccoli girl through and through; it is my absolute favorite vegetable! So you can only imagine my joy when I found broccoli from my favorite farm, Johnson’s Backyard Garden, at my local farmer’s market this weekend!

I had to resist the urge to buy the entire bin and surround my week with broccoli soup, sides, sandwiches… yes I could go on… I just decided to buy a few heads, and make a delicious addition to my favorite turkey sandwich, but don’t worry, there will be numerous more broccoli recipes throughout the rest of the season!

Roasted broccoli was meant to have provolone melted all over it and paired with peppery turkey breast! This melty, spicy, hearty sandwich is the perfect treat! Enjoy!

Roasted Broccoli & Turkey Sandwich

Time: 30 mins   Serves: 2

-1 French Stick bread or Hoagie Roll

-2-3 tbls spreadable butter

-2 tbls of mayonnaise

-1/2 lb thinly sliced peppered turkey breast, chopped into small pieces

-6 slices of bacon

-4-6 slices of provolone cheese

-2 heads of fresh broccoli, cut into florets

-1 tbls olive oil

-1/2 tbls garlic powder

-salt & pepper


Preheat the oven to 400 degrees.

Toss broccoli with olive oil, garlic powder, ½ tsp of salt & pepper.

Roast on a sheet tray in the oven for 20 mins until slightly browned.

Over medium heat, fry the bacon until crisp. Place on a plate with paper towels to drain.

Meanwhile, slice the bread in half lengthwise, but not all the way through. You want it to still be attached on one edge and open up like a book. Next cut the loaf in half to make two sandwiches.

Liberally butter the bread; completely covering the top half.

When broccoli is done roasting, heat up the oven to broil on 450 degrees.

Place the bread under the broiler until the butter melts and the bread just begins to brown. About 5 mins.

Meanwhile, on medium heat melt 1 tbls of butter on in a pan. Add the diced turkey, and sauté until meat is well heated. About 7-8 mins.

When the bread is browned, remove it from the oven.

Top the bread with the bacon, 3 slices for each sandwich, turkey, broccoli, and cheese.

Place sandwiches back under the broiler until the cheese melts, about 5 mins.

Liberally slather the top half of the sandwich with mayonnaise. Cut in half, and serve.
