Looking for a healthy sandwich that still packs the crunch of something fried? Try loading up your next sandwich with radishes!
Radishes are a great addition to any dish, as they are high in Vitamin C and can aid in digestion. So when I received a big bundle of radishes in my CSA box this week from Johnson’s Backyard Garden, I was ecstatic!
You can find sliced radishes on many salad bars, but think beyond that! Sandwiches can really benefit from the spicy crunch of radishes. By avoiding bacon, or crispy onions, you can save both fat and calories, but still get that crunch with healthy veggies. So next time you stack up your favorite sandwich, try adding some thinly sliced radishes! Here is how I crisped up my favorite one! J
Turkey Veggie Sandwich
Cook Time: 5mins Serves: 1
-Sprouted Grain Bread, 2 slices
-1/2 tbls mayonnaise
-1 slice of provolone cheese or *cream cheese
-1-2 radishs, thinly sliced
-1/2 small cucumber, thinly sliced
-2 slices of peppered turkey breast
-salt & pepper
Spread hummus on one piece of bread, and mayonnaise on the other slice.
Sprinkle both sides with salt & pepper.
Layer the cucumber over the hummus with the slices slightly overlapping each other.
Layer the radish on top of the cucumber in the same way.
On the other slice of bread, layer the cheese and turkey.
Stack sandwich together, cut on a diagonal.
*you can substitute the sliced cheese for a thin layer of cream cheese as well.
