Looking for an easy side dish that everyone will love?  Check out my go-to recipe for roasted potatoes and onions. 

This week I received some very cute fingerling sweet potatoes in my local CSA (Community Supported Agriculture) box from Johnson’s Backyard Garden.  I absolutely love roasted sweet potatoes, and couldn’t resist mixing these cuties with some creamy baby gold potatoes.  I also added some red and yellow onions, which I received in my CSA box as well, and some fresh rosemary from my own garden.

This side dish is absolutely delicious, and a breeze to throw together with any meat or main dish that you may already have going in the oven. Enjoy!

Oven-Roasted Onions & Fingerling Potatoes

Total Cook Time: 40mins Serves: 4

-1 yellow onion, cut into large chunks

-1 red onion, cut into large chunks

-4 garlic cloves, smashed

-1/2 lb fingerling sweet potatoes, halved

-1 lb baby gold potatoes, halved

-1/2 cup of olive oil

-1 tbls fresh rosemary, finely chopped

-1/2 tbls salt & pepper


Preheat the oven to 350 degrees.

Combine all of the above ingredients in a small baking dish. Make sure that all of the potatoes and onions are coated in olive oil.

Bake in the oven for 30 -40 minutes until potatoes are fork tender.
